Rich Dessert Pancakes
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 cup butter, softened
1/4 cup sugar
1 egg
3/4 cup milk
Mix together flour, baking powder and baking soda; set aside. Cream butter and sugar
until fluffy. Beat in egg thoroughly. Add flour mixture alternately with milk, beating
after each addition until smooth.
Cook on a hot saucepan until bubbly on top and brown on bottom. Turn to brown other side.
Serve warm or cold with ice cream, whipped cream, applesauce, or Fruited Pancake Syrup.
Yield: 6 to 8 medium-sized pancakes
